PEAR CIDER GLAZED SAVOY CABBAGE WITH CARAWAY

the inspiration for this came from the Alton Brown GOOD EATS show.


Ingredients:

1 head green cabbage savoy
½ head red cabbage
4 oz salted butter
1 TBS caraway
2 TBS favorite prepared mustard    1 cup pear cider
¼ cup parsley, chopped
1 TBS paprika vinegar, optional

Method:

Julienne the cabbages and combine; set aside.  Meanwhile heat butter and cook till frothy & lightly brown; add caraway; mustard and pear cider. Simmer to reduce slightly; toss in cabbage and parsley; heat until al dente but cooked. If desired, finish with paprika vinegar.
