1 ¼# ground beef sausage, cooked chilled*
½ cup grated Parmesan
2 oz EVOO
1 tsp ground pepper
2 tsp ground coriander
4 cloves garlic, minced
2 cups ricotta cheese, drained well
1 cup feta
3 TBS parsley, chopped
