FRESH BEEF SAUSAGE (with Mediterranean spices)


Ingredients:

2 ½ pounds ground beef (chuck)
1 Tablespoons chamen spice*
1 ½ teaspoons allspice
½ teaspoon black pepper
2 teaspoon cumin
1 teaspoon paprika
1 teaspoon cayenne
4 each cloves of garlic, pasted
3-5 teaspoons salt
2 ounces EVOO

Method:

Method: Add all the ingredients to the ground beef and gently toss to distribute. Add EVOO and salt.  ( *see Bob's recipe for Chamen or purchase in spice shops; you may substitute 1 tablespoon fenugreek if unable to find it)
