CROTIN (fried cheese)



Ingredients:

2 oz goat cheese
2 oz cream cheese
½ cup AP flour
2 eggs
½ cup panko
2 cups vegetable oil

Method:

Cream cheeses together and form into ½ oz disks; bread by first dredging in flour, then coating in whisked eggs and finishing with panko; lay on a parchment line sheet pan; refrigerate for 30 minutes; fry in heated oil until golden brown; remove to paper and blot dry; refrigerate until needed for service. At service, place in 400ºF oven for approximately 4 – 5 minutes to heat through and crisp.
